Der DE-Wert (Glukose\u00e4quivalent) wird im Bereich von 5 bis 19 kontrolliert. Wir brechen die Reaktion sofort gewaltsam ab, um die komplexen langen Ketten zu erhalten, und spr\u00fchen sie dann direkt trocken.<\/p>\n\n\n\n<p>Andererseits, <a href=\"https:\/\/www.sgnutri.com\/de\/glukose\/\">Glukose<\/a> muss \"vollst\u00e4ndig hydrolysiert\" werden. In den industriellen Rezepten ist der Ausgangspunkt, egal ob man Mais, Weizen, Kartoffeln oder Tapioka verwendet, derselbe: Man mischt die Rohst\u00e4rke mit Wasser und stellt St\u00e4rkemilch her. Zu diesem Zeitpunkt ist die St\u00e4rke noch nicht wasserl\u00f6slich, und die Molek\u00fclkette ist ebenso kompliziert wie un\u00fcbersichtlich.<\/p>\n\n\n\n<p>Ob Glukose oder Maltodextrin, der erste Schritt ist die Verfl\u00fcssigung. W\u00e4hrend des Erhitzens geben wir Alpha-Amylase in das Gef\u00e4\u00df. Das Zeug ist wie eine Schere, die die langen St\u00e4rkeketten willk\u00fcrlich in k\u00fcrzere l\u00f6sliche Fragmente (z. B. Dextrin) zerschneidet. Zu diesem Zeitpunkt sind die chemischen Pfade der beiden v\u00f6llig deckungsgleich. Aber gleich nach dieser ersten Unterbrechung weicht unsere Produktionsstrategie ab.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Maltodextrin_Production\"><\/span>Maltodextrin-Herstellung<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Ein zentrales Merkmal der Maltodextrinherstellung ist die begrenzte Hydrolyse. Bei der Entwicklung von Formeln, die Maltodextrin ist nicht f\u00fcr S\u00fc\u00dfe oder Monosaccharid-Molek\u00fcle, wollen wir seine F\u00fcllung, K\u00f6rper Form und Viskosit\u00e4t.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00dcberwachung des DE-Wertes: Dieser Schritt ist wichtig, um ihn im Auge zu behalten. Wir wollen den Grad der Hydrolyse in einem bestimmten Bereich kontrollieren, normalerweise liegt der DE-Wert zwischen 5 und 19.<\/li>\n\n\n\n<li>Erzwungene Beendigung: Sobald die St\u00e4rke gerade so weit aufgebrochen ist, dass sie sich aufl\u00f6st, aber noch eine signifikante multimere Struktur aufweist, muss sie sofort abgebrochen werden. In der Fabrik stellen wir in der Regel den pH-Wert ein oder setzen hohe Temperaturen ein, um die Alpha-Amylase zu inaktivieren und zu \"bremsen\".<\/li>\n\n\n\n<li>Behalten Sie komplexe Ketten bei: Aufgrund des fr\u00fchen Stopps wird das Gemisch von komplexen langkettigen Polysacchariden und nicht von Einfachzuckern dominiert.<\/li>\n\n\n\n<li>Sofortige Spr\u00fchtrocknung: Da wir diese Art von gemischtem lang- und kurzkettigem Pulver wollen, m\u00fcssen wir keine Kristallisation vornehmen und es direkt der Spr\u00fchtrocknung zuf\u00fchren.
