Plus pr\u00e9cis\u00e9ment, une mol\u00e9cule de glucose poss\u00e8de plusieurs groupes hydroxyles (-OH) polaires. La mol\u00e9cule d'eau (H\u2082O) est \u00e9galement polaire, son atome d'oxyg\u00e8ne \u00e9tant l\u00e9g\u00e8rement n\u00e9gatif et ses atomes d'hydrog\u00e8ne l\u00e9g\u00e8rement positifs. Lorsque le glucose p\u00e9n\u00e8tre dans l'eau, les mol\u00e9cules d'eau, agissant comme de minuscules aimants, sont attir\u00e9es par les groupes hydroxyles de la mol\u00e9cule de glucose et forment des liaisons hydrog\u00e8ne avec eux. Cette attraction est suffisamment puissante pour surmonter les forces qui maintiennent les mol\u00e9cules de glucose ensemble dans leur forme de cristal solide. Par cons\u00e9quent, les mol\u00e9cules de glucose individuelles sont \"arrach\u00e9es\" du cristal et se dispersent uniform\u00e9ment parmi les mol\u00e9cules d'eau, un processus que nous observons sous le nom de dissolution.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Polarity_Of_Molecules\"><\/span>Polarit\u00e9 des mol\u00e9cules<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>En chimie, le principe de \"ce qui se ressemble s'assemble\" est fondamental et explique parfaitement la relation entre le glucose et l'eau. Tous deux font partie des mol\u00e9cules polaires, et c'est ce point commun qui d\u00e9termine qu'ils peuvent \"s'accepter\" l'un l'autre. La polarit\u00e9 d'une mol\u00e9cule, pour dire les choses simplement, est l'uniformit\u00e9 de la distribution de ses charges internes. Celle-ci d\u00e9coule des diff\u00e9rences d'\"\u00e9lectron\u00e9gativit\u00e9\", c'est-\u00e0-dire de la capacit\u00e9 des atomes \u00e0 attirer les \u00e9lectrons partag\u00e9s dans les liaisons chimiques.<\/p>\n\n\n\n<p>Eau (H\u2082O) : Dans une mol\u00e9cule d'eau, les atomes d'oxyg\u00e8ne sont beaucoup plus \u00e9lectron\u00e9gatifs que les deux atomes d'hydrog\u00e8ne. Cela signifie que les \u00e9lectrons de liaison seront davantage orient\u00e9s vers l'atome d'oxyg\u00e8ne, lui conf\u00e9rant une faible charge n\u00e9gative (\u03b4-), tandis que les deux atomes d'hydrog\u00e8ne se retrouveront avec une faible charge positive (\u03b4+). Sa structure comporte de nombreux groupes hydroxyles (-OH). Dans chaque groupe hydroxyle, l'oxyg\u00e8ne est plus \u00e9lectron\u00e9gatif que l'hydrog\u00e8ne et le carbone qui lui sont attach\u00e9s. Il en r\u00e9sulte une s\u00e9paration importante des charges au sein de chaque groupe -OH, ce qui le rend tr\u00e8s polaire. Avec autant de groupes hautement polaires sur une mol\u00e9cule, l'ensemble de la mol\u00e9cule de glucose devient naturellement une mol\u00e9cule polaire.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Hydrogen_Bonds\"><\/span>Liaisons hydrog\u00e8ne<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>C'est pr\u00e9cis\u00e9ment parce que le glucose et l'eau sont polaires qu'ils cr\u00e9ent les conditions n\u00e9cessaires \u00e0 la formation d'une force intermol\u00e9culaire puissante, la liaison hydrog\u00e8ne. Une liaison hydrog\u00e8ne est une attraction sp\u00e9ciale, assez forte. Elle se produit g\u00e9n\u00e9ralement entre un atome d'hydrog\u00e8ne li\u00e9 \u00e0 un atome fortement \u00e9lectron\u00e9gatif (comme l'oxyg\u00e8ne, l'azote ou le fluor) et un autre atome \u00e9lectron\u00e9gatif proche.<\/p>\n\n\n\n<p>Lorsque le glucose solide est plac\u00e9 dans l'eau, les mol\u00e9cules d'eau ont une extr\u00e9mit\u00e9 hydrog\u00e8ne faiblement charg\u00e9e positivement et sont fortement attir\u00e9es par les atomes d'oxyg\u00e8ne faiblement charg\u00e9s n\u00e9gativement dans le groupe hydroxyle du glucose. Inversement, l'extr\u00e9mit\u00e9 oxyg\u00e8ne faiblement charg\u00e9e n\u00e9gativement de la mol\u00e9cule d'eau est \u00e9galement attir\u00e9e par les atomes d'hydrog\u00e8ne faiblement charg\u00e9s positivement du groupe hydroxyle du glucose. Ce r\u00e9seau d'attraction entre ces deux mol\u00e9cules constitue l'essence de la liaison hydrog\u00e8ne dans ce sc\u00e9nario.<\/p>\n\n\n\n<section class=\"wp-block-themepark-block-themepark-area mol\u00e9culaire.<\/p>\n\n\n\n<p>Les mol\u00e9cules d'eau s'approchent des cristaux : \u00c0 l'\u00e9tat solide, le glucose existe sous la forme d'un r\u00e9seau cristallin, et les mol\u00e9cules individuelles sont maintenues les unes aux autres par leurs propres forces intermol\u00e9culaires. Lorsque ce cristal est jet\u00e9 dans l'eau, les mol\u00e9cules d'eau en mouvement commencent \u00e0 frapper sa surface.<br>Hydratation et attraction : Les mol\u00e9cules d'eau polaires entourent imm\u00e9diatement les mol\u00e9cules de glucose \u00e0 la surface du cristal. En formant un grand nombre de liaisons hydrog\u00e8ne, l'attraction d'un groupe de mol\u00e9cules d'eau sur une seule mol\u00e9cule de glucose devient plus forte que la force entre cette mol\u00e9cule de glucose et ses voisines dans le cristal.<br>Se d\u00e9tache et se lib\u00e8re : Cette puissante \"traction\" exerc\u00e9e par les mol\u00e9cules d'eau tire effectivement les mol\u00e9cules de glucose individuelles hors de la structure solide. Il faut souligner ici que la mol\u00e9cule d'eau ne rompt pas les liaisons covalentes fortes au sein de la mol\u00e9cule de glucose ; elle ne rompt que les forces intermol\u00e9culaires plus faibles qui maintiennent la structure cristalline. Il en r\u00e9sulte que les mol\u00e9cules de glucose intactes se d\u00e9tachent du cristal et passent en solution.
