Cependant, dans le cas de pr\u00e9parations n\u00e9cessitant une grande quantit\u00e9 de sucre, se fier uniquement \u00e0 l'allulose entra\u00eenerait une consommation excessive de substituts de sucre. C\u2019est encore plus compliqu\u00e9 pour les biscuits, car le sucre blanc apporte une texture \u201c croustillante \u201d lorsqu\u2019il se cristallise en refroidissant, tandis que l\u2019allulose ne cristallise pas du tout en refroidissant.
