Three Ingredient Families, Three Formulation Starting Points

Stachyose is a defined tetrasaccharide composed of galactose, glucose, and fructose. It provides a specific molecule for product briefs that call for stachyose and comes as a white to off-white powder. Its composition distinguishes it from XOS and GOS mixtures before processing format or concentration is considered.

XOS is a family of oligosaccharides built from two to seven xylose units. The specifications separate total XOS2-7 from the shorter-chain XOS2-4 fraction, so buyers can compare the composition of different grades rather than treating every XOS ingredient as equivalent. XOS also offers the broadest format choice in this range, with dry grades and a liquid grade.

GOS 57% Syrup is a lactose-derived mixture produced through a beta-galactosidase reaction. Its specification allows up to 43% lactose plus monosaccharides on a dry basis. That carbohydrate profile affects sweetness, browning, allergen review, and label composition, making GOS a materially different formulation choice from stachyose or XOS.

Decide How the Ingredient Should Enter the Batch

Powders work naturally in dry premixes and processes that already meter dry solids. Within the XOS powder series, a more concentrated grade supplies the target XOS amount with less total ingredient mass, leaving more room for flavors, proteins, minerals, or other formula components.

Syrups enter liquid batching without a separate powder-dispersion step. They also bring water and non-target solids into the batch. Formulators should use each syrup's dry matter and oligosaccharide assay to balance the recipe rather than substituting a syrup for a powder at the same weight.

For a new formula, choose the oligosaccharide family from the product concept and composition requirements first. Then select powder or syrup from the production process, and use the dry-basis assay together with moisture or dry matter to calculate the as-supplied amount.

Match the Ingredient to the Formulation

Beverages and dairy products

XOS 70% Powder has documented acid and heat stability, which supports evaluation in yogurt, lactic-acid beverages, carbonated drinks, and other beverages exposed to acidic processing. XOS 70% Syrup offers the same specified XOS2-7 concentration on a dry basis for plants that meter liquid ingredients.

GOS 57% Syrup provides a lactose-derived option for dairy and nutrition formulas. Its 74.0–76.0% dry matter affects water balance, while the lactose-plus-monosaccharide fraction contributes to the formula's carbohydrate profile.

Bakery, candy, and prepared foods

XOS powders provide dry handling for bakery mixes, desserts, seasonings, canned foods, and candy. The grade determines how much powder is needed to reach a target amount of XOS2-7, so a higher grade leaves more of the formula available for flour, sweeteners, flavors, or other solids.

GOS syrup can contribute prebiotic solids and some sweetness to bakery and candy formulas. Its liquid load and residual lactose and monosaccharides can change solids balance, browning, and sweetness compared with an XOS powder.

Nutrition and health-food formats

Stachyose gives nutrition products a named, discrete tetrasaccharide in powder form rather than an oligosaccharide range classified by chain length. XOS fits products that need a selectable oligosaccharide concentration, and the 70% powder provides documented acid and heat stability for processed formats. GOS fits lactose-derived prebiotic concepts and liquid production when its lactose and monosaccharide contribution is compatible with the formula and label.

Compare Active Content as Supplied

Oligosaccharide percentages for the XOS and GOS products are stated on a dry basis. Syrup dry matter is a separate value: it shows how much of the syrup is solid material, while the dry-basis assay shows how much of those solids meets the stated oligosaccharide definition. Multiply the minimum dry solids by the minimum dry-basis assay to estimate the minimum target oligosaccharide delivered by the ingredient as supplied.

製品 Minimum dry solids in 100 kg as supplied Minimum dry-basis assay Calculated minimum target oligosaccharide
XOS 95% Powder 95 kg, based on water ≤5.0% XOS2-7 ≥95.0% 90.25 kg XOS2-7
XOS 70% Powder 95 kg, based on water ≤5.0% XOS2-7 ≥70.0% 66.50 kg XOS2-7
XOS 35% Powder 94 kg, based on water ≤6.0% XOS2-7 ≥35.0% 32.90 kg XOS2-7
XOS 70% Syrup 70 kg XOS2-7 ≥70.0% 49.00 kg XOS2-7
GOS 57% Syrup 74 kg GOS ≥57.0% 42.18 kg GOS

The calculation uses the maximum listed water for each powder and the minimum listed dry matter for each syrup. It turns dry-basis percentages into an as-supplied comparison for trial planning; the batch certificate of analysis supplies the actual values for commercial production.

The listed XOS specifications also set limits for ash, arsenic, lead, total plate count, coliforms, mold, and yeast. Include any required ingredient statement, allergen statement, origin document, or market-specific certificate in the supplier review.
