About The Glucose
Glucose is a simple sugar widely distributed in nature and an indispensable nutrient for the metabolism of living organisms.
I. Properties of glucose.
1. Physical properties.
Glucose is a colorless crystal or white crystalline or granular powder, odorless and sweet.
Glucose is easily soluble in water, slightly soluble in ethanol, insoluble in ether.
2. Chemical properties.
Glucose has aldehyde groups and hydroxyl groups and can undergo various chemical reactions such as oxidation, reduction and esterification.
II. The roles of glucose.
1. In the medical field.
1.1 As a dietary supplement to treat hypoglycemia. When the body’s blood sugar level is too low, taking glucose can quickly increase blood sugar levels and relieve the symptoms of hypoglycemia.
1.2 Glucose injection is a commonly used pharmaceutical solvent and rehydration preparation, which can be used to replenish water, correct electrolyte imbalance and provide energy.
1.3 In the diagnosis of certain diseases, such as the glucose tolerance test, it is used to detect the body’s ability to metabolize glucose and to assist in the diagnosis of diabetes and other diseases.
2. In the food industry.
2.1 As a sweetener, it is widely used in various foods such as candies, beverages, pastries, etc. The sweetness of glucose is relatively low, about 70% of that of sucrose, but it has a mild sweetness and is not overly sweet like sucrose.
2.2 Used in the fermentation process in food processing to provide carbon sources for microorganisms and promote fermentation. For example, in processes such as brewing and bread making, glucose is an important fermentation substrate.
2.3 As a preservative, glucose can undergo a Maillard reaction with amino acids and other substances to produce substances with antioxidant effects, thus extending the shelf life of food.
3. In other fields.
3.1 In biological and chemical experiments, glucose is often used as a component of the culture medium for culturing cells and microorganisms.
3.2 In industrial production, glucose can be used as a raw material for the synthesis of other chemicals such as gluconic acid, glucuronic acid, etc.
III. Sources of glucose.
1. Natural source.
Fruits such as grapes, apples, bananas, etc. are rich in glucose.
Honey also contains large amounts of glucose and fructose.
Grains produce glucose during the germination process, and malt, for example, contains a higher proportion of glucose.
2. Artificial synthesis.
Glucose can be obtained by hydrolysis of starch. Under the action of acids or enzymes, starch is gradually hydrolyzed to glucose. This is one of the main methods for industrial production of glucose.
Using cellulose as a raw material, glucose can also be produced by chemical or biological methods. Cellulose is one of the most abundant natural polymer compounds on earth. It is of great importance to utilize cellulose resources to produce glucose.
