About The Lactitol monohydrate
Physical and chemical properties
Sweetness: The sweetness is about 30%-40% of sucrose, with a mild taste and no aftertaste.
Calorie: The calorie is about half of sucrose, specifically 8.4kJ/g or 8.36kJ/g, and it is a low-calorie sweetener.
Solubility: It is very soluble in water and slightly soluble in ethanol. The pH of 10% lactitol aqueous solution is 4.5-8.5. The solubility and viscosity of lactitol at room temperature are similar to those of sucrose, and its solubility at low temperature is lower than that of sucrose.
Stability: It has strong stability and can maintain its stability under acid, alkali, light and high temperature conditions. There is no free hydroxyl group in the molecular structure. It is a non-reducing sugar alcohol and cannot undergo Maillard reaction and enzyme degradation reaction.
Preparation method: Lactose is made from skim milk, then filtered after pressurized hydrogenation (100℃, 30%-40% lactose liquid, 4MPa) under nickel catalysis, and then concentrated and crystallized after refining with ion exchange resin and activated carbon. It can also be obtained by fermenting pasteurized milk.
